How do you factor in the wind speed and direction when driving the ball from the tee/fairway? My drives seem to end any where but on the fairway from the tee and usually in the rough, oob or in the water!

There is an arrow in the top center of the main window that shows the wind direction. Imagine that arrow being directly above you (and looking down on you) when you play the shot. If the arrow is pointing up, the wind is from behind you or helping. If the arrow points down, then the wind is hurting (you are playing into the wind). If the arrow points left, then you have a right-to-left wind. If the arrow points right, then you have a left-to-right wind. Obviously, there are combinations of wind as well and the arrow will point in other directions (if it points down and the left, then the wind if blowing into you from the right .... etc.).
The speed of the wind is provided below the arrow. Most players feel the wind has very little effect on ball flight if it's breezy or less (wind less than about 5-10 mph or 10-15 kph), but you'll have to decide for yourself how much to consider the wind. I don't know of a method to know how many feet or yards to aim off-line to account for side winds or a certain speed. To me, that just experience and your best guess at the time. I'd say that directly into a wind of about 20 mph will cost you one club (on your approach, you might need an 8-iron instead of a 9-iron if into that type of wind).
I hope that helps, even thought it's just general in nature. Perhaps others can provide maths/formulae to get a more specification calculation, but for me that would take away the enjoyment of golfing.

As a rule in my play . . .I generally aim 10 yards into a cross wind of 10-15mph. I take 1 more club, generally around 10 yds, into a frontal wind of 10-15mph. Also, into a 15-20 wind I take two clubs higher. Determining your trajectory can help with club distance as well. In a soft 10mph cross wind you can put a little trajectory to your shot and cross into the wind with a gentle fade to hold the ball on line.
